One aged feature of the #offal cannon is Tongue - something we associate normally as a pressed dense, greyish meat block, sliced into inorganic cuboid portions. In its raw individual form, it’s an extraordinary thing to behold, and quite the task to excavate intact from the animal’s skull and jaw. So it's worth even more care and consideration when being cooked with. Muscular and bouncy, it does require time and process in order to reveal its unique texture and flavour, but therefore invites so much intrigue, fun, and satisfaction in seeing the end result.
