Put simply, a bloody decent breakfast.
Hungover, hampered by hunger, or deserving of a hug for the tastebuds, devilled kidneys fits the bill beautifully. The earthy intensity of pork kidney really delivers something satisfying. I would argue, though, that with generous dustings of ground black pepper, smoked paprika, sumac and cayenne pepper, fried and loaded onto rye bread with fresh avocado and a gooey soft boiled egg, really does wonders. Smokey, meaty, but without the grease or abrasive saltiness of your assumed bacon or sausages in such scenarios, and of course the fact that it was FREE, strokes greater comfort into the eating of it.
Nutritionally, it will also perk up the insides more than the bog-standard, bog-of-grease-ridden fry up. Kidneys comprise of a multitude of beneficial vitamins - pigs’ in particular show to be brimming with Vitamin C and B12, both proven to reinvigorate you post-alcohol-indulgence and are hugely beneficial for promoting immunity and warming the cockles during the colder months.
